The yeast has been killed and we have added clearing agents. Now we are waiting for the lees to settle before we rack it again. Then we will let it settle for a while, then bottle. I thought this was interesting because the sun was shining on the carboy and you can really see into the wine. Sorry about the fingerprints on the carboy. Everyone who comes into the kitchen rubs and hugs the wine. Maybe that’s why it’s so good!
