How do I mellow out the flavor of homemade wine?

The first couple of sips of my homemade wine has quite a bite but after that it mellows and you can enjoy the robust flavor. Is there a process for smoothing it without diluting it?

Not really. Homemade wine usually has a high alcohol content. It’s the high alcohol content that gives it the bite. If you try to stop the fermentation process earlier you can lower the alcohol content but you will be left with a highly acidic wine.

The key is to find the balance, practice makes perfect.
