Homemade Wine?

A friend of mine made some wine, and wants to know it’s safe. She used an ordinary sterile water bottle, filled it with 1/3 100% Welch’s Grape Juice(totally sterile) and 2/3 purified water. Then added 6 table spoons of sugar, and 2 1/2 pinches of baker’s yeast. She put a balloon with a small hole on the top, and siphoned it every week into a clean container once a week for 3 months. I told her I thought it would be safe, but I’m obviously not an expert. If you are here simply to tell me it’s bad and not to do it, or your some 40 year old soccer mom who feels the need to be a control freak, don’t answer. Only answer if you know what you are talking about. Thank you

As long as everything you’ve used is as clean as you say, it will be just fine. There’s nothing among the list of ingredients that will cause any kind of toxic by-product. If it gets contaminated with bacteria, the funkiness will give it away long before it reaches your mouth. If it smells nasty (not likely from what you describe) then it will be obviously bad. If it’s not grossly nasty (not the same as tasting different from what you might expect) then you’ll all be ok.

Tasty, Health Boosting Goji Berry Recipes!

These little Tibetan Goji berries are plumper than the Chinese ones, and they taste much better to me. I have been feasting on them for a week now, and losing about half a pound a day!

The taste is a little hard to describe. It’s not quite as sweet as a raisin and not as tart as a dried cranberry. They are pleasing to most people.

In Tibet and Mongolia, people love these berries so much that they devote two weeks a year to celebrating the berries, probably something like wine fests in Europe in past times. The most commonly cited side effect of eating too many berries is that they might cause you to laugh more. It is said that a handful in the morning will make you happy all day.

They are a very rich source of vitamin C, having 500 times more vitamin C per ounce than oranges, actually more almost any fruit you could name. They are also a superb source of vitamin A, not surprising because they are a really pretty red color. Goji berries also have vitamins B1, B2, B6, and E; they are becoming a famous antioxidant. They are also a rich source of both selenium and germanium and have hence been used in a number of clinical trials involving cancer patients. When given to patients undergoing chemotherapy, the berries conferred significant protection for the liver.

In Oriental medicine, they are said to correct chi deficiency, meaning that people with low energy, insomnia, heart palpitations, and even anxiety are more comfortable after consuming Goji berries.
The therapeutic dosage is 10-30 grams per day, and the berries may be taken at any time and in any form, from liquid to a snack food. The berries have 18 amino acids and 21 trace minerals, linoleic acid, and more beta-carotene than carrots.

In vitro studies suggest that Goji berries kill many kinds of cancer cells. The mechanism whereby this happens is believed to involve some factor that inhibits the ability of the cell to divide, thus lowering its reproductive capacity.

A large study in Japan suggested that tumor growth was inhibited by 58% among the patients eating Goji berries as compared to the control groups.

A study in Mongolia showed that patients eating the Goji berries had a significant increase in lymphocyte activity and that their blood began to resemble that of much younger persons.

Goji Recipes

Goji Drink:

In a big glass of hot or cold water, juice or herb tea add one handful of Goji Berries and let them sit and hydrate for a few minutes or put several handfuls in a pitcher and enjoy all day as you drink your own delicious Goji Berry elixir. Chewing the Gojis as you drink is a wonderful experience and with 500 times more Vitamin C by weight then Oranges, It’s a great pick-me-up between meals and the most delightful way to enjoy a glass of water.

Goji Fruit Smoothie:

For a unique experience in phytonutrient energy that you feel throughout your body as a buoyant lift that fills you with joy and feeds you right down to a cellular level. Blend together equals amounts of Goji Berries, blueberries, cherries, apples, raspberries and blackberries. Put in a blender for a few seconds; add a cup of water, rice milk, or orange juice for easier blending. To add a special touch dust the top of juice with cinnamon or cocoa powder and a light sprinkle of chopped pine nuts and serve.

Goji Trail Mix:

This is also one of our favorites. We mix up our combinations and play with the recipe almost every time we make a new batch. Our young ones like it when we add dark chocolate chips to the blend. We use the Tibetan Goji Berries with pumpkin seeds, sunflower seeds, flax seeds, pecans, small amount of pine nuts, walnut pieces, dried blueberries, apples slices, cherries, peaches, pineapple, and a small amount of coconut shreds.

Cream of Buckwheat with Goji Berries:

For people who struggle with wheat allergies and gluten intolerance, buckwheat is an ideal food. Many people who are having physical and emotional challenges find that removing wheat and other gluten containing foods from their diet makes a profound difference in how they think and feel. Buckwheat has plenty of protein and B vitamins, and is rich in phosphorus, potassium, iron, and calcium. Although buckwheat has many grain-like characteristics, it is from an entirely different botanical family, and is actually a fruit. Since buckwheat is unrelated to the classic cereal grains, those who are allergic to wheat can tolerate buckwheat.

To make a serving for two people: Bring 2 1/2 cups of water to a boil, slowly stir in 1/2 cup of Cream of Buckwheat, return to boil. Add a handful of Goji Berries per person. A dash of good quality salt is optional. Reduce heat to low, simmer 10 minutes stirring frequently

Tibetan Goji & Blueberry-Peach Pie:

A lavish nutty crust surrounds layers of juicy peaches, Goji Berries and blueberries. A perfect nutrient rich treat.

Crust: 1 and 1/4 cup all-purpose flour
2 tablespoons sugar or Stevia liquid extract – 20 drops
1/8 teaspoon of nutmeg
5 tablespoons butter, cut into 1-inch chunks
1 egg, beaten
1/2 teaspoon almond extract
1/2 cup finely chopped pecans Peach layer
3 cups peeled and sliced fresh peaches
2 tablespoons sugar or Stevia liquid extract – 20 drops
1 tablespoon lemon juice
1 teaspoon cornstarch
1 tablespoon butter Blueberry layer
4 cups blueberries
1/4 cup sugar or vegetable glycerin
1 tablespoon cornstarch
1 teaspoon lemon juice
dash ground cinnamon
1 tablespoon butter

Goji Berry layer: 4 cups Goji Berries – presoak twenty minutes in peach juice to soften
1/4 cup sugar or vegetable glycerin
1 tablespoon cornstarch
1 teaspoon lemon juice
dash ground cinnamon
1 tablespoon butter

Preparation:

1.To make the crust, place the flour and sugar or glycerin in a food processor. Process briefly to mix. Drop the chunks of butter into the feed tube with the motor running and process quickly until the mixture is crumbly. Add the egg, almond, and pecans and process until just combined. Do not overmix the crust.

2.Form the dough into a flattened ball and press it into the bottom and sides of a 12-inch tart pan with a removable bottom. Chill the crust for 30 minutes.

3.Preheat oven to 350F.

4.Bake the crust for 15 to 20 minutes, or until slightly brown around the edge. Cool the crust on a wire rack.

5.To make the peach layer, mash the peaches together with the sugar/glycerin, lemon juice, and cornstarch in a medium saucepan and cook over medium heat for 5 minutes, or until the mixture thickens. Add the butter and stir until blended. Cool slightly and pour into the cooled crust.

6.To make the blueberry layer, mash 2 cups of the blueberries with the sugar/ glycerin, cornstarch, lemon juice, and cinnamon and cook in a large saucepan over medium heat for about 10 minutes, or until thickened and translucent. Stir in the butter and the remaining whole blueberries. Cover the peach layer with this blueberry mixture. Leave the tart in the pan and cover tightly with plastic wrap before putting into the pack.

7.To make the Goji Berry layer, mash 2 cups of the presoaked or blanched Goji Berries with the sugar or glycerin, cornstarch, lemon juice, and cinnamon and cook in a large saucepan over medium heat for about 10 minutes, or until thickened and translucent. Stir in the butter and the remaining whole Goji Berries. Cover the blueberry layer with this Goji Berry mixture. Leave the tart in the pan and cover tightly with plastic wrap before putting into the pack. Makes one 12-inch pie!

How I Got Kicked Out of the Chile Heads

We just returned from the Fiery Foods Show, held again in Albuquerque, New Mexico and I had a lot of people asking for the hottest chile pepper we offered. I smiled, not at their extreme passion for scoville units, but because I couldn’t supply them with anything hotter than our Coyote Trail Green Chile Sauce. Sure, the Green Chile Sauce has some heat, but nothing like what these guys were looking for. I thought back to our departure from a sound business plan-the time we were also in search of the heat.

We embarked on the path to heat with fury. Could we also create the world’s hottest sauce? Habanero chiles flooded my desk. The test kitchen had the chile cloud hanging low, enough to cause sneezing and coughing through cloth masks. People wanted the heat and by golly we were going to give it to them. Perhaps I would be like my buddy, Dave Hirschkop, creator of Dave’s Insanity Sauce, who is rumored to have once been banned from the Fiery Foods Show because his sauces were so deadly hot.

We were on the road and my stomach was converting intestine cells into a mamma would be proud, chile pepper cast iron vault. I tasted a dozen or so formulas. Raspberry chipotle habanero relish. And then there was a peach zinger with enough firepower to launch a missile. Roy, our product analyst was especially proud of a tomatillo and jolokia chile spread that was supposed to be spread gently on toast. The morning bite, like fishing I guess.

With all the options, two stood out, but still I was uneasy. Not just my stomach lining, but my instincts. The market is full of hot sauces with appropriate names referring to body parts and functions. Where did we fit?

When I started New Mexico Chile Company, I wanted to provide gourmet cooking sauces and our tag line was immediately established-Coyote Trail Sauces-Making Everyday Gourmet. I was adamant about the fact that every sauce had to marry well with food and wine. If the sauce was too hot or overpowering it wouldn’t compliment food. Now, here I was branching off into the hot sauce business. Very soon, I’d have to have some intestine work done so the deadline was approaching.

I came to my decision one day while flying to California and appropriately enough I was reading Herb Kelleher’s story describing how he had started Southwest Airlines. The book is titled Nuts and in this business classic he tells the story of staying the path to success.

Despite the distractions, he put on the corporate blinders and ventured forth with a plan set in stone. Southwest, he wrote, did not fly international because it wasn’t what they did well. Their airline was a short distance carrier catering to business people. The five hundred mile journey is their expertise. And for years, at board meetings, he fought the urge to expand and conquer airwaves beyond what they did well.

It seems that other airlines disagreed and once they solidified their local position, they opened international routes. If they could fly around California, surely they could set their wings toward Europe. Many tried and most filed bankruptcy and all eventually lost money.

This struck me las profound and about that time the flight attendant walked by, inquired about beverages and dropped two packages of roasted nuts onto my tray.

I decided then that the morning bite wasn’t for us. We would stay the course of prosperity, watch the Chile Heads delve into the insanity that concentrated levels of capsicum will deliver. Dave could rest easy. I kicked myself out of the Chile Heads society.

We’ll continue to make the world’s best enchilada sauce and we truly do understand the world is a better place because of our Green Chile Sauce. It may not be the morning bite, but Santa Fe Chicken is a staple among many of our customers and that’s good enough for me.

Santa Fe Chicken An Easy Chicken Recipe

Ingredients

2 lbs boneless chicken breasts
1 cup br onion
2 cloves garlic
2 tsp olive oil
16 oz Coyote Trail Green Chile Sauce
8 oz grated cheddar cheese
cilantro or parsley to garnish

Optional garnish: sour cream (save for table-do not cook), sliced black olives,nchopped roma tomatoes

In a large skillet Saute chicken, Chop onion & garlic, Brown chicken, drain important. Add Coyote Trail Green Chile Sauce. Top with cheese and if needed other optional ingredients. Transfer to 350 degree oven. Bake until it bubbles-about 12 minutes

Garnish with remaining toppings. Serve with tortillas, beans, salad

How much alcohol is needed for homemade wine to bottle it and preserve it?

I have this great recipe for Apple Pie Wine using 180 proof grain alcohol. Can I bottle this and consider it preserved? How much alcohol should I use to preserve this wine?
Wine has a percentage of alcohol. Is this what keeps it from spoiling?
I know how to make wine. And have made a few bottles over the years. I really like the recipe I have for Apple Pie "Wine." And I want to bottle it instead of keeping it in the refrigerator. So my question would really be with 10% alcohol by volume in sanatized bottles and corks, will it keep.

1 gallon apple cider

1 quart APPLE juice

7 cinnamon sticks

2 cups of sugar

Boil until sugar dissolves. Turn off heat let stand until at room temperature

Then add 1 pt of Everclear.

Serve chilled

1 pint makes it about 5% alcohol I add 1 quart to make it 10%

Bottle it and it will keep.

Why Everyone Needs To Create Intimacy In A Relationship.

If you’re wondering, “How is intimacy created?” here are some ideas.

The first thing you might do is leave your partner a sexy or romantic note (not a raunchy one). You might leave it one of several places that include the kitchen, office, living room, car, bedroom, bathroom, garage or even outdoors.

If you know what he or she is going to be putting together for dinner, and especially if you’re going to making the dinner together, you could put the note inside the cook book on the recipe page he or she will open too. If you send your partner off to work with snacks or lunch pack the lunch and hide the note under the food.

If you’re the one making the meal you might use some of the food to spell out a message. If, for instance, you’re creating a salad, cheese or hunks of ham could spell out I Love You across the top of the scrumptious salad you place in front of her or him.

Giving a gift just because you feel like it – no special occasion – is how intimacy is created as well. It’s especially intimate if it’s something she or he has taken a liking to or admired in a store or magazine.

The fact that you not only remembered that it appealed to him but took the time to go find it and wrap it up, makes it a very intimate and very romantic gesture.

Walking together holding hands through the woods, or along the banks of the river, especially by moonlight or at sunset – or sunrise – can create so much intimacy.

There you are all alone, just the two of you, without a care in the world, and in beautiful surroundings. You might also head out to that lake, or a beautiful flower-strewn field, in the middle of a gorgeous sunny day with a blanket and a picnic basket.

This is intimate and romantic, especially if the two of you have taken the day off work to do so.

Rent a romantic movie and watch it alone together, snuggled on the couch, with a little wine and cheese. Not a funny movie, not an adventure flick. Something loving and romantic, with a happy ending. How this would create intimacy!

making home made wine for the first time can any one help?

ok since I am new at the wine making. i bought 2 16 oz bottles of juce. it is welches grape and apple from concentrate. but I do not know how much yeast and sugar I need to add to each 16 oz bottle for a good fermentation.the articles I have read said it would tell me on the back of my Yeast packet but. I have not found it. if any one has tips besides buy it at the liquor store and drink it i would appreciate it.I really want to know how to make my own. and have a decent wine.

If I was going to wing it, given the ingredients you have, I would add 32oz of water and 1lb of sugar and the whole yeast packet. Good luck.

Alcohol Detox After The New Year Party

The parties over the New Year are over. You have had a merry time with your family and friends. But you are now suffering from the effects of having one glass of wine too many. A splitting headache and stomach pains are making you sick and miserable.

You long to be up and about. So what remedies are available for a faster recovery?

Firstly, if you are throwing up, then it is good sign. Your body is rejecting the alcohol in your body. It is far better to remove it rather than have it in your body.

You are likely to be dehydrated. Alcohol makes you visit the toilet more often. When your organs get deprived of water, they try to take their water supply from elsewhere, including the brain cells. You get a hangover headache when your brain starts to shrink due to water loss.

Hence, the obvious remedy is to load up on liquids. Drink plenty of water in the next 1-2 days, so that it also enhances the flushing out of the toxins from your body.

Liquids can be taken in several forms. The first is obviously warm water. Warm water helps to calm your drugged stomach. Cold water just won’t do. Add a touch of lemon to help you calm your stomach.

You can also take warm water in a herbal detox tea concoction. A favourite Ayurvedic herbal recipe for this: boil some cumin, coriander and fennel in boiling water and then drink. This recipe helps to soothe your gastric pains and to aid in digestion. Also a good suggestion is to try mint tea to settle your upset stomach.

Instead of stuffing more food into your stomach over the next few days, try juices. Freshly squeezed juices help to ensure that you are still packed with vitamins while your stomach takes a break. Vegetable juices are excellent as an aid in calming your stomach. Do not however buy the juices in a packet.

Get sufficient rest and sleep while your body enzymes process the alcohol in your system. Alcohol does make you feel sleepy so it is important to obey your body’s call for rest.

Obviously, you should abstain from consuming more alcoholic drinks while your body recovers. Slowly ease into a healthy diet. The next time you drink, remember about what you feel the morning after. Drink one glass less and you will thank me for it.
