We have most of a bottle of a very sweet raspberry wine and would like to make a dessert sauce from it. I will be using it to top raspberry wine brownies and vanilla ice cream.
Any suggestions for recipes/directions?
Chocolate Raspberry Ganache:
16 oz. semi sweet chocolate
16 oz. heavy cream
heat cream to boil, stir into chocolate until smooth.
Wine Reduction:
Place wine in heavy saucepan, reduce on medium flame by 1/2.
Add the wine to the chocolate ganache, stirring constantly
if it gets stiff heat over double boiler until workable.

i’m asking, because at work we had a presention, on how to serve wine upper class restaurant. And some reason wine making came up. So now we have some unanswered question now. One is why is suger and yaest is needed to make wine? And why does wine taste different if made the same why but grown in different climates? can anyone answer please.

The longer life wines are the balanced wines that taste good and have a balanced pH level. The good tasting batches don’t last long because you find occasions to drink them quickly, so storing may not be as much a problem as you think. The site referenced below says that up to two years can be ok for a nicely balanced homemade wine.
The shelf life of a homemade wine will depend on the ingredients and pH level. You should experiment, because no one can tell you this with precision unless they know what the ingredients are and how much of each ingredient is used. It can be a fun trial and error thing you can do, until you finally get it right.
Flavor can even be affected by the temperature of the room the bottle is kept in; if the temperature is kept constant it stays stable and nice, but if it varies by more than a few degrees, the wine ingredients can become volatile (break down too easily for longer term storage). If the bottle is filled all the way to the cork or not, if the bottle is stored in a darker place, on its side and rotated on a regular basis, or badly kept, unrotated, warming gently while upright in the sun…
Don’t think you’ll notice the flavors that much to rotate and otherwise "babysit" your wines? Well, try this- when you sip your wines for tasting, open your mouth for a second to let the air hit it, then let it coat your mouth and swallow. Then breathe out your nose. As you exhale, you will smell/taste the flavors closely. (Your nose actually helps you taste flavors on your tongue and you can even smell as you exhale through your nose.)
In the past when I have made wines, there has been settling of the ingredients at the bottom. Some batches tasted better after shaking it around to mix it. Some were ruined that way. The best wines have little to no sediment as the sediment adds volatility that can change flavors in time.

I’m not looking to make any quality wine, my budget is extremely limited and I’d rather make it easy.
If you want to make wine, you may as well make something worth drinking. Get CJJ Berry’s book First Steps in Home Winemaking. Except for not requiring food-grade plastic, his instructions are good and some of the recipes are outstanding.
Can I make vinegar with my leftover must after making homemade wine?

I’ve drained off the must and have it left over after pulling the juice off for wine. Is there a way to add water or more sugar or something to turn that into vinegar?
To make real vinegar, you’ll need a mother of vinegar. Leaving out must will only give you bad wine.

i’ve been brewing my way through the credit crunch and have made pretty much everything from prison pruno to windfall cider. now that ive mastered the art of turning free stuff into alcohol i feel the need for challenge so im desperately seeking the ultimate unusual homemade wine.
Definitely baby mice wine is the most unusual I’ve heard of, the name says it all, and no, Im not joking one bit, its popular in China and Korea

to allow the gas caused by fermentation to be released. However the yeast bubbled up and filled the balloon… some of the foam leaked out of the balloon. Has this ever happened to anyone else, will the wine be okay???
Sounds like you just over filled your container. The nice thing about yeast is it will keep working. Just let the wine keep fermenting and it will tell you when it’s done.

White ZInfadel….how long does it stay in the carboy? and is it safe to remove the fermentation valve to pull a sample out to test?
I’m assuming this is from a kit?
If so, follow the directions that came with the kit as far as racking and aging go. If it’s not a kit, then you should rack every month or two, whenever there’s a good 1/2 inch of lees on the bottom of the carboy.
Yes, you can remove the airlock momentarily to draw samples, just make sure your thief/pipette is sterile, and make sure that nothing falls into the wine. Then put the airlock back as soon as possible.
